Chef Victor Siow

With more than four decades of culinary experience, Chef Victor Siow is the visionary founder of Las Carretas Mexican Restaurant & Bar, established in 1996. Trained in Western cuisine, he holds a Food & Beverage Diploma from the International College of Hotel Management, Switzerland, and a Degree in Hotel & Restaurant Management from New Hampshire College, USA.

Driven by a passion for bold flavours and hospitality excellence, Chef Victor introduced authentic Mexican cuisine to Subang Jaya at a time when it was virtually unheard of in Malaysia. Under his leadership, Las Carretas grew steadily, expanding to Ampang and beyond together with his wife, Madam Melanie Liew, while remaining true to its founding principles of quality, authenticity, and warm hospitality.

Over the years, Chef Victor has continued to evolve the brand through creative menu innovation, premium ingredient sourcing, and strategic collaborations — including partnerships in Australian Beef and Lamb festivals and other culinary showcases. His dedication to fresh ingredients, dynamic food promotions, and consistent standards has sustained Las Carretas as a beloved dining institution for nearly three decades.

Today, Chef Victor remains hands-on in the kitchen, blending tradition with innovation, and continuing to shape the legacy of Las Carretas with the same passion that started it all.
